boondi laddu

                                   

Our family members are very fond of this laddu. I frequently make this on special occasions.

Ingredients:                                                30 nos laddu

               

     
For batter:                                               1cup....300 ml

Bengal gram flour ( kadalai maavu ) ........1cup
Rice flour....................................................2  tbsp
Salt..............................................................1 pinch
Cooking soda...............................................1 pinch
Water............................................................1 cup(maximum)

Take a bowl, add all ingredients and mix well to a batter.

For syrup:


Sugar.................................11/4cups
Water.................................1/2 cup
Cardamom powder.............1 tsp

Heat sugar and water in a pan. Once sugar is  completely dissolved  switch to medium flame to make syrup till you get a one thread consistency, switch off the flame. Keep the sugar solution aside.

(Cashew nuts. .................10 nos
Raisin.( dry grapes ) .......10 nos
Ghee. .................................2 tbsp


Heat a pan in medium flame, add ghee, cashew nuts, raisin and kept aside.)

Oil. ................... To fry boondi

Method:

Heat  oil in a pan, place ladle 6-7 inch above the pan and pour the batter on top of it. 


Batter will fall in the oil like balls.Fry until boondi turns golden brown  in color. 

Take it out from  the oil, transfer to the  sugar syrup.

Repeat  the process for the remaining 3/4 batter.

Remaining  1/4 batter, make boondi.


Add the fried nuts,raisin,cardamon powder to the sugar syrup boodi.




Grind it in a mixer and add to the sugar syrup boodi.




When it is Luke warm, make balls and store in a air tight container.
