Murukku ( Thenkuzhal )


                                    


Ingredients:

Raw rice
(pacharisi) ----------- 4 cups
Black gram 
(Urad dal)---------------------1cup
Fried gram 
(pottukkadalai)---------------------1/8 cup
Cumin seeds ------------------1 tbsp
Asafoetida ---------------------1tsp
Sesame seeds ---------------1tbsp
White butter ------------------2 tbsp ( melted )
Oil ------------------------------to fry ( 500gm)
Salt -----------------------------to taste 


To make powder:



 Soak the rice in water for 1 hour or more  and drain all  the 
 water.
                  


     
Grind into a fine powder in mixer grinder.
           



when its still wet, heat a kadhai in medium flame and roast the wet rice powder till it spreads like sand.

Then remove it from kadhai and let it cool. 
Once cool down, grind the powder and siev
to make it fine powder. 
     
Black gram (urad dal)


Roast the urad dal and fried gram slightly warm.
                    



After 5 minutes grind into a fine Powder in 
mixer grinder

       

 
Mix rice and black gram powder thoroughly to make the murukku maavu.
Method:


In a bowl, add Murukku maavu, melted butter,
cumin seeds, sesame seeds,asafoetida and mix well. 
Then add salt( to taste) and water to make a dough.




 Heat oil in a kadhai to deep fry the murukkus. 
Fill the dough in the murukku press with murukku hole plate.
I always grease some small plates with oil and make murukku first in that then drop them in oil.
This way we can get decent shapes and also our hands
won't feel the heat. 




Deep fry them in medium flame.
Cook both sides till it turns golden in color.
Remove from oil and cool down completely before storing them in airtight container.
