Muttai vengayam -( Egg gravy)

 

This dish is very tasty with chapatti. It can also be prepared without
egg  and  called  thakkali vengayam.It also tastes good with rice and carrot pulao. (for this recipe see my next post)


Ingredients:

Eggs ------------------- 4 nos ( boiled and cut in half  )
Onions------------------4 medium size ( finely cut )
Tomatoes------------ ---2 nos ( finely cut )
Chilly powde-----------2-3  tsp
sambar powder---------1tsp
Oil-----------------------4 -5 tsp
Curry leaves------------few
Coriander leaves-------few
Salt-----------------------to taste
Garam masala----------1/4 tsp ( optional )

Method  :

Heat a  pan in medium flame and  add onion, tomatoes,  salt and
saute for 1 -2 minutes



Add 1 cup water, cover the pan and simmer the flame to let it cook. 


When oil starts oozing out from the gravy, add chilly powder and
sambar powder ( garam masala--optional). This is thakkali vengayam

After 2 minutes,  add boiled eggs into the gravy. 

                    
                            
Garnish with curry leaves and coriander leaves.
